Method
-
step 1
Heat 2 tbsp of the oil in a saucepan over a medium heat. Fry the onion with a pinch of salt for 7 minutes. Add the garlic, chilli and rosemary, and cook for 1 minute more. Tip in the tomatoes and sugar, and simmer for 20 minutes.
Little helper job: Children can help measure the oil, sprinkle in the sugar and add the chopped tomatoes. Older children can strip rosemary leaves from the stalks.
Grown-up job: All chopping and hob cooking should be handled by an adult.
-
step 2
Heat the remaining oil in a medium frying pan over a medium heat. Squeeze the sausagemeat from the skins and fry, breaking it up with a wooden spoon, for 5 to 7 minutes until golden. Add to the sauce with the milk and lemon zest, then simmer for a further 5 minutes.
Little helper job: Children can zest the lemon with supervision and pour the milk into the sauce.
Grown-up job: Removing sausage skins and frying the meat should be done by an adult due to raw meat and heat.
To freeze, leave the sauce to cool completely and transfer to large freezerproof bags.
-
step 3
Cook the pasta following pack instructions. Drain and toss with the sauce. Scatter over the parmesan and parsley leaves to serve.
Little helper job: Children can help grate the parmesan with supervision and sprinkle over the parsley before serving.
Grown-up job: Draining boiling pasta should always be done by an adult.
Make ahead and storage tips
- Cool completely before freezing
- Freeze for up to 3 months
- Defrost overnight in the fridge and reheat until piping hot
Serve with a simple green salad or garlic bread for a cosy, crowd-pleasing dinner that works just as well for a relaxed Sunday as it does for a busy Wednesday night.
